Winter pruning has begun

Every winter, pruning sets the rhythm of the estate. It is slow work, repeated row after row, and it largely decides the harvest to come: the number of buds left on each vine, the balance of the plant, its ability to age well.

This year, the dry January cold has been ideal. The vines are fully dormant and the pruning cuts are healing cleanly.
